BAKED CHICKPEA BURGERS

MATERIALS:

  • 500 g cooked Agrino Chickpeas (approx. half a pack)

  • 2 fresh onions

  • 2 garlic cloves

  • ¼ bunch coliander

  • ¼ bunch parsley

  • 1 carrot

  • 1 dry onion

  • 2 eggs

  • 1 tsp cumin powder

  • 1 tsp ground nutmeg

  • 1 tsp allspice

  • 80 g breadcrumps

  • Zest and juice of 1 lemon

  • 2 tbsps olive oil

  • Salt

  • Freshly ground pepper

METHOD OF PREPARATION:

We soak the chickpeas for about 8-10 hours before boiling them for about 1,5 hrs. We place them in a large bowl and mash them with a hand masher. We chop the fresh onions, garlic, coriander and parsley. We grate the carrot and the onion and drain the juices they contain. We add all the vegetables along with the eggs, cumin, nutmeg, allspice, breadcrumbs, zest, lemon juice, olive oil, salt and pepper to the bowl with the chickpeas. We knead the mixture well and leave it in the fridge for at least 30’. We them make the burgers and place them on an oven plate covered with baking paper. We sprinkle them with some olive oil and bake them in a preheated oven at 180ο C for 20΄-25΄.
